Tandoori is food cooked in a Tandoor.
tandoor -- a large clay oven sunk into the ground and layered with glowing charcoal.
Traditional tandoors are rare, even in India (though they are a lot more prevelant in Persia). However, traditional tandoors give the BEST Kulchas, Fulkas, Rumalis and Naans (types of bread. They look a lot like Tortillas).
A few examples of Tandoori dishes:
- Machali Masala (grilled breaded salmon steaks marinated in olive oil, lemon juice, herbs, and spices)
- Achari Kababs (lamb marinated in pickling spices, onions, and vinegar)
- Thayir Pachadi (cucumber with grilled potatoes, onions, and tomatoes in yogurt)
