I have quite a few keyboardists that I think are wonderful so to make this answer easy:

all solos of Rick Wright
all solos of Steve Winwood (Traffic)
all solos of Tony Banks (Genesis)
all solos of Dennis DeYoung (Styx)


Those are my fave keyboard solos

Rick Wakeman's usual keyboard solo whie touring with Yes is always a joy to listen to, but the one he does on the ABWH Evening With Yes Music Plus DVD makes you just want to give up, right then and there. He probably plays more notes in the 5 minutes he's playing than a whole orchestra does in 15 minutes! And although he's just playing 256th notes or whatever, it's still awesome!
