This is an interesting link I've had bookmarked for awhile.
Look up your artist of interest, and it tells what songs they've covered/had covered. It's not 100% accurate or complete by any means, but it's a good start.

I've heard like 80 metal bands play their version of Sweet Home Alabama, but I know its not the most covered, its just the one ive heard covered the most.
