Still made in the traditional way to this very day. The curds are placed in a pair of socks (never washed) which were worn by Charles De Gaulle for 4 months during his cycling tour of France in 1946. This gives Roquefort its rich aroma and had led to people all over the world remarking " it smells like it has been matured in a stinky Frenchman's old socks".
